Hot Bacon Pasta Salad

  1. This recipe is sooo good, hearty but light and extremely versatile.
  2. Add more bacon or use less, add different vegetables, add diced chicken (oooh, that sounds good), do whatever you want with it.
  3. Just try it!
  4. Cook pasta according to package directions.
  5. Dice up bacon and place in a large skillet, seasoning liberally with pepper.
  6. Cook until crispy; remove to another bowl.
  7. Add mushrooms to skillet and cook 2-3 minutes, or until tender.
  8. Add spinach leaves; cook and stir until wilted.
  9. Toss in cooked pasta.
  10. Mix the vinegar, sugar, and salt and pour over the pasta.
  11. Stir everything together and serve hot.
  12. Serves 8.
