Sig's Berries over Goat's Cheese Crostini
- 6 large ripe strawberries , thinly sliced
- 1 good handful of blueberries
- 2 good pinches fresh cracked black pepper
- 1 tbsp raspberry vinegar or use balsamic
- 1/2 tbsp best olive oil
- 4 slice of french stick bread ( rather than baking them cross I toast them slightly in toaster)
- 80 grams soft camenbert like goat's cheese thinly sliced
- 2 good pinches of dried basil
- 2 handful of peppery rocket salad leaf
- Add the berries into a bowl and drizzle with vinegar and oil then the pepper, mix well.
- Set aside for about 15 minutes
- Toast the diagonally sliced bread and top with goat's cheese slices
- Sprinkle with the basil
- Add the berries
- Serve on a bed of the rocket salad
- Drizzle with the dressing left over from fruit
