Ranch Dinner
- 1 qt. sliced raw potatoes
- 3/4 c. uncooked rice (not instant)
- 2 lb. ground chuck
- 2 large onions
- 2 green peppers, sliced thin
- 1 (1 lb.) can tomatoes
- 2 1/4 tsp. salt
- sprinkle of garlic
- 1/4 tsp. pepper
- Cheddar cheese
- Spread potatoes on bottom of a 9 x 13-inch pan.
- Add salt, pepper and garlic.
- Sprinkle rice over potatoes.
- Crumble meat and fry in skillet.
- Then spread over the potatoes and rice.
- Arrange onions over the meat and peppers over the onions.
- Pour tomatoes over all and add water up to the level of the rice.
- Lay pieces of cheese on top.
- Bake at 400u0b0 for 40 to 45 minutes, then at 350u0b0 for 40 minutes more.
- Let stand 15 minutes before serving.
- This is good made early and put in the oven to heat.
