Golden Pumpkin Bread

  1. Heat oven to 350F.
  2. Grease bottom only of 3 (5 3/4x3-inch) mini loaf pans; set aside.
  3. Combine all ingredients in bowl.
  4. Beat at medium speed, scraping bowl often, until well mixed.
  5. Spoon batter into prepared pans.
  6. Bake 30-35 minutes or until toothpick inserted in center comes out clean.
  7. Cool 10 minutes; remove from pan.
  8. Cool completely.
  9. Store refrigerated.
  10. *Substitute canned pumpkin.
