Sopaipillas (Fried Pastry)

  1. Combine flour and baking powder in large bowl.
  2. Cut in cream cheese with pastry blender or 2 knives until mixture resembles fine crumbs.
  3. Gradually add water, mixing after each addition until well blended.
  4. Shape into ball; knead on lightly floured surface 5 min.
  5. or until smooth and no longer sticky.
  6. Cover; let stand 10 min.
  7. Divide dough in half.
  8. Roll half the dough into 12x10-inch rectangle on floured surface; cut into 12 squares.
  9. Cut each square diagonally in half.
  10. Repeat with remaining dough.
  11. Heat 2 inches of oil in medium saucepan to 375F on medium-high heat.
  12. Add dough pieces, in batches; cook 1 to 2 min.
  13. or until edges of sopaipillas are golden brown, turning once.
  14. Remove from pan with slotted spoon; drain on paper towels.
