Grilled Peaches With Blue Cheese

  1. In a saucepan, over medium heat, stir together the sugar, balsamic vinegar and pepper.
  2. Simmer until liquid has reduced by one half.
  3. It should slightly thicken.
  4. Remove from heat, and set aside.
  5. Preheat grill for medium-high heat.
  6. Lightly oil grill grate.
  7. Place peaches on prepared grill, cut side down.Cook for about 5 minutes, or until the flesh is caramelized.
  8. Turn peach over.
  9. Brush the top side with the balsamic glaze, and cook for another 2 to 3 minutes.
  10. Transfer the peaches onto individual serving dishes, and drizzle with the remaining glaze.
  11. Sprinkle with blue cheese.
