Minty Roasted Potatoes

  1. Preheat oven to 350F.
  2. Prik the potatoes with the tines of a fork and arrange them on a baking sheet.
  3. Bake for 90 minutes.
  4. Cut the potatoes into quarters and place them in a serving bowl.
  5. Toss them, while hot, with the oil, Kosher salt, pepper, and garlic.
  6. Gently toll in the mint.
  7. Serve hot or at room temperature.
