Barbara's Best Lemon Cake

  1. Add all cake ingredients together and beat for 2 minutes.
  2. Add Wesson oil and beat 2 more minutes.
  3. Bake in preheated 325 degree (175 C.) oven for 35 to 40 minutes.
  4. While cake is baking, mix the powdered sugar, juice and rind of the lemons.
  5. Mix well.
  6. When cake is done, prick it with a toothpick in rows about 1 inch apart and pour glaze over cake while hot.
