Baked Mac & Cheese for One

  1. Preheat oven to 400 degrees F.
  2. Cook pasta according to package directions (I cooked mine to al dente).
  3. Drain.
  4. Melt butter in a small saucepan set over medium heat.
  5. Whisk in the flour for 30 seconds.
  6. Whisk in the milk and cook, whisking constantly, until smooth and thickened, about 2 minutes.
  7. Turn off heat.
  8. Add in the mustard, Worcestershire sauce, and gouda; whisk until melted and smooth.
  9. Season to taste with cayenne, salt, and pepper.
  10. Toss the pasta with the cheese sauce and spoon into an individual oven-proof bowl or dish.
  11. Toss panko breadcrumbs, olive oil, and a tiny pinch of Kosher salt together in a small bowl; scatter evenly over the top of the pasta.
  12. Bake for 10 minutes, or until the cheese sauce is bubbling and the breadcrumb topping is crisp and golden.
