Patriotic Whoopie Pies

  1. Preheat oven to 350.
  2. Line 2 baking sheets with parchment paper
  3. Whisk flour, baking powder and salt in a bowl, set aside

  5. Add the flour mixture and blend well
  6. Remove half of dough to another bowl
  7. Color one bowl of batter blue with the blue food color.
  8. Color the other red with the red food volor
  9. Drop by 2 tablespoon fulls 2 inches apart on prepares pans.
  10. Smooth tops a bit
  11. Bake until they spring back when touched 10 to 12 minutes.
  12. Cool on rack in pan 5 minutes then transfer to racks to cool completely
  13. MAKE STRAWBERRY CREAM FILLING
  14. Beat butter until smooth, add remaining ingredients and beat until creamy
  15. Sandwich strawberry cream between one blue and one red cake
  16. To finish whoppie pies, Spread sprinkles on a plate
  17. Roll edges of filled whoppie pies in sprinkles to coat egdes
