Cajun Chicken Club Sandwich
- 72 each boneless skinless chicken breasts (4 oz. each)
- 1-1/2 cups Cajun seasoning
- 144 slices bread slices, toasted
- 1 qt. GREY POUPON Bistro Sauce
- 144 slices OSCAR MAYER Bacon, cooked, drained
- 72 each leaf lettuce leaves
- 36 each medium tomatoes, each cut into 6 slices
- Rub both sides of chicken with Cajun seasoning.
- Preheat grill to medium-high; cook chicken 5 to 6 minutes on each side or until cooked through (180F).
- For each serving: Spread one side of each toast slice with 1-1/2 tsp of the sauce.
- Cover 1 of the toast slices with 1 chicken breast, 2 bacon slices, 1 lettuce leaf and 3 tomato slices; cover with second toast slice.
- Cut diagonally in half to serve.
- Secure each half with 4-inch frilled toothpick.
