Roasted Garlic and Herb Pizza Bites

  1. For roasted garlic:
  2. Roast garlic by cutting the top off a bulb.
  3. Place on a piece of foil, drizzle with olive oil and sprinkle with salt before securing foil around garlic.
  4. Bake for 45 minutes in a 350-degree oven.
  5. For the pizza:
  6. Place a pizza stone in a cold oven.
  7. Preheat oven to 450 degrees.
  8. Roll out pizza dough about 1/8 inch thick.
  9. Using a biscuit cutter, cut out circles from the dough.
  10. Spoon sauce over dough circles.
  11. Sprinkle with dried oregano.
  12. Top with a small mound of mozzarella cheese and a couple pieces of roasted garlic.
  13. Repeat with remaining dough circles.
  14. Carefully transfer circles to the hot stone and bake for 8-10 minutes or until bottoms of pizza bites are golden brown.
  15. Remove from the oven and transfer to a platter.
  16. Top each pizza bite with fresh basil and thyme, a light pinch of sea salt and a drizzle of olive oil.
  17. Makes about 2 dozen.
