Crispy Cookies
- 1 c. white sugar
- 1 c. brown sugar
- 2 sticks corn oil margarine
- 1 c. oil
- 2 eggs
- 1 tsp. vanilla
- 3 1/2 c. plain flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 c. oatmeal
- 1 c. cornflake crumbs
- 1 c. coconut
- 1/2 c. chopped pecans
- Cream the butter.
- Gradually add sugars, beating well at medium speed of an electric mixer. Add eggs and beat well.
- Add oil and vanilla. Combine flour, soda and salt. Add to creamed mixture. Stir in oatmeal, cornflake crumbs, coconut and pecans. Shape dough into balls.
- Place on ungreased cookie sheets and flatten each ball with fork.
- Bake at 325u0b0 for 15 minutes. Remove from cookie sheet and cool on wire racks. Yields about 7 dozen.
