Best Dinner Rolls Recipe
- 1/2 c. oil
- 1/2 c. sugar
- 1 teaspoon salt
- 1/3 c. corn meal
- 2 c. lowfat milk
- 2 Large eggs, beaten
- 1 pkg. dry yeast
- 1/4 c. hot water
- 4 c. all-purpose flour
- 1/2 c. butter, melted
- Combine first 5 ingredients in double boiler.
- Cook over warm water till thick.
- Pour into bowl.
- Cold till lukewarm.
- Add in Large eggs; mix well.
- Dissolve yeast in hot water in bowl.
- Add in to cooked mix; mix well.
- Cover with wet towel.
- Let rise for 2 hrs.
- Add in flour; mix well.
- Knead lightly on floured surface.
- Let rise, covered, till doubled in bulk.
- Roll on lightly floured surface.
- Cut with round biscuit cutter.
- Brush with melted butter; mix in half.
- Place on baking sheet.
- Brush with butter.
- Bake in preheated 400 degree oven for 15 min.
- Brush with melted butter immediately.
- Yield: 36 rolls.
