Black Tea Pork
- 2 blocks Pork leg (block)
- 2 tea bags Black tea (tea bag)
- 200 ml Soy sauce
- 100 ml Sake
- 100 ml Vinegar
- 50 ml Mirin
- Tie the slab of meat with kitchen twine.
- In a pot, heat water with tea bags and boil for a few minutes.
- Take out the tea bags.
- Add the meat.
- Simmer for 40 to 50 minutes.
- Skim off the scum.
- Turn over the meat time to time.
- Do not cover with a lid.
- While cooking the meat, mix the ingredients in a bowl for the dipping sauce.
- When the meat is cooked, dip it in the sauce while it is still hot.
- When it has cooled down a little, put everything in a plastic bag and let it rest in the refrigerator.
