Black Tea Pork

  1. Tie the slab of meat with kitchen twine.
  2. In a pot, heat water with tea bags and boil for a few minutes.
  3. Take out the tea bags.
  4. Add the meat.
  5. Simmer for 40 to 50 minutes.
  6. Skim off the scum.
  7. Turn over the meat time to time.
  8. Do not cover with a lid.
  9. While cooking the meat, mix the ingredients in a bowl for the dipping sauce.
  10. When the meat is cooked, dip it in the sauce while it is still hot.
  11. When it has cooled down a little, put everything in a plastic bag and let it rest in the refrigerator.
