Grapefruit Sparkler

  1. In a small saucepan, combine 1 cup water with the sugar and star anise; bring to a boil, stirring occasionally, until the sugar has dissolved.
  2. Remove the pan from the heat; let cool completely.
  3. Pour the mixture through a fine sieve into a measuring cup (to yield 1 cup); discard the star anise.
  4. Cover the syrup with plastic wrap, and chill.
  5. In a large pitcher, combine the grapefruit juice, Campari, and chilled syrup.
  6. Divide among 8 glasses; top with champagne.
  7. Serve immediately.
