Prawns with Garlic and Coriander

  1. If the prawns need peeling, pull off the heads and legs, then peel off the shells, but leave the tails on.
  2. If you see a dark vein along the back, make a fine slit with a sharp knife and pull it out.
  3. Heat the olive oil in a large frying pan, add the prawns, and cook for a minute.
  4. Turn them over, add the garlic and coriander, and cook for a minute more, until the prawns turn pink.
  5. They should not need any salt.
  6. Serve them hot with the lemon quarters.
