Prawns with Garlic and Coriander
- 16 large, raw king prawns
- 3 tablespoons extra virgin olive oil
- 3 garlic cloves, finely chopped
- Handful of chopped coriander
- 1 lemon, cut in quarters
- If the prawns need peeling, pull off the heads and legs, then peel off the shells, but leave the tails on.
- If you see a dark vein along the back, make a fine slit with a sharp knife and pull it out.
- Heat the olive oil in a large frying pan, add the prawns, and cook for a minute.
- Turn them over, add the garlic and coriander, and cook for a minute more, until the prawns turn pink.
- They should not need any salt.
- Serve them hot with the lemon quarters.
