Swordfish with Herby Mayo Marinade
- 1 lb. swordfish steaks
- 1/4 cup mayonnaise
- 1 tbsp. red wine vinegar
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- 1/4 tsp. garlic powder
- Salt and black pepper to taste
- In a plastic zipper bag, combine the mayonnaise, vinegar, oregano, basil, garlic powder and salt and pepper.
- Add the swordfish steaks and allow to marinate in the refrigerator for 2 hours.
- Grill or saute in a little olive oil over high heat for approximately 5 to 7 minutes per side or until fish is browned a bit and cooked but not dry; it really depends on the thickness of the steaks.
