Microwave Taco Salad Recipe
- 1 pound hamburger
- 1 med. onion, minced
- 1 (15 ounce.) can kidney beans, liquid removed
- 1/2 c. water
- 1/2 to 1 pkg. taco seasoning
- 1/2 head lettuce, torn into bite-sized pcs
- 2 med. tomatoes, cut in chunks
- 1/2 green pepper, minced
- 1/2 c. Cheddar cheese, shredded
- 1/2 c. Monterey Jack cheese, shredded
- 1 c. corn chips, broken
- Lowfat sour cream (optional)
- Chili or possibly taco sauce
- Brown meat and onions on high for 4 1/2 to 6 1/2 min.
- Stir, then drain.
- Add in beans, water and taco seasoning.
- Cook, uncovered, 10 to 13 min on medium power (50 percent) or possibly till thick and bubbly, stirring once.
- Combine lettuce, tomatoes and peppers in a salad bowl.
- Spoon meat mix over vegetables in bowl.
- Top with cheeses and chips.
- Serve immediately with sauce.
- Top with lowfat sour cream.
