Healthier Blueberry Muffins

  1. Mix together the flours, sugar, and baking powder.
  2. Mix together the applesauce, milk, egg, lime juice and rind.
  3. Add the wet ingredients to the dry ingredients and mix just until combined.
  4. Carefully stir in the blueberries.
  5. Spoon into greased muffin tins.
  6. Sprinkle each muffin with a small amount (maybe 1/2 a teaspoon) of raw sugar.
  7. Bake at 400F for 17 minutes.
