Smokey Blue Ribbon Cheese Soup
- 6 slice thick cut apple wood bacon diced
- 2 lb smoked sausage diced
- 1 2 pound block Velveeta cheese cubed
- 1 large onion, chopped
- 2 tbsp minced garlic
- 1/4 cup all-purpose flour
- 48 oz Pabst Blue Ribbon beer
- 1 gallon milk
- satue bacon,smoked sausage, onion, and garlic in large stock pot until sausage is browned and onion is caramelized
- stir in flour and cook for 4-5 min
- add beer and bring to a rolling boil for 5 min
- reduce heat to medium and add cheese stirring until melted.
- If it gets too thick thin it out with some of the milk
- add the rest of the milk and simmer 20-30 min stirring frequently to keep from scorching
- serve with crackers, bread sticks, or soft pretzels and enjoy
