Artichoke & Red Pepper Dip
- 1/2 cups Roasted Red Pepper, Drained And Coarsely Chopped
- 1/2 cups Artichoke Bottoms, Drained And Coarsely Chopped
- 2 cloves Garlic, Minced
- 1/2 cups Monterey Jack Cheese, Shredded
- 1/2 whole Lemon (just The Juice)
- 3 Tablespoons Parmesan Cheese
- Preheat oven to 400 degrees.
- Mix all ingredients together, except Parmesan cheese.
- Transfer to oven-proof bowl, and sprinkle Parmesan on top.
- Bake about 30 minutes until heated through and bubbly.
- Serve with crackers or toasted pitas.
