Buffet Casserole
- 1 lb. lean ground beef
- 1 medium onion, chopped (1/2 c.)
- 1 clove garlic, minced
- 1 Tbsp. salad oil
- 1 (10 oz.) pkg. frozen chopped spinach
- 1 lb. spaghetti sauce with mushrooms
- 1 (8 oz.) can tomato sauce
- 1 (6 oz.) can tomato paste
- 1/2 tsp. salt
- dash of pepper
- 1 (7 oz.) pkg. (2 c.) shell macaroni (medium), cooked
- 4 oz. sharp process American cheese, shredded
- 1/2 c. soft bread crumbs
- 2 well-beaten eggs
- 1/4 c. salad oil
- Brown beef, onion and garlic in 1 tablespoon oil.
- Cook spinach and drain, reserving liquid.
- Add water to make 1 cup. Stir liquid, tomato and spaghetti sauces, salt and pepper into meat mixture and simmer 10 minutes.
