Chicken Taco Casserole Recipe

  1. Boil chicken, using bay leaves and whole onion for seasoning, till tender.
  2. Remove from bone.
  3. Mix chicken soup, diced green chiles and minced onion with a little lowfat milk to thin soup mix.
  4. Be careful not to use too much lowfat milk.
  5. Heat tortillas in a small amount of vegetable oil to soften.
  6. Line bottom of 13 x 9 inch baking pan with 6 tortillas, 1/2 chicken, 1/2 soup mix an 1/2 cheese.
  7. Repeat.
  8. Bake at 350 degrees for 30 min or possibly till casserole is bubbling.
