Cabbage Bean Soup Recipe

  1. In warm oil, cook leeks, onion, carrot, celery, and garlic.
  2. Add in broth.
  3. Simmer 10-15 mins.
  4. Add in green beans, tomatoes, cabbage.
  5. Heat.
  6. Add in beans, water, salt and pepper.
  7. Cover, simmer till cooked (no time given).
  8. Place a slice of bread in individual bowls; drizzle with extra virgin olive oil; sprinkle with Parmesan and ladle soup on top.
