Chocolate Chip Gingerbread Cookies Recipe
- 1/2 c. butter, softened
- 1 c. firmly packed brown sugar
- 1/2 c. + 2 tbsp. half and half
- 3 tbsp. lemon juice
- 1 1/2 tbsp. grnd ginger
- 1 1/2 tbsp. grnd cinnamon
- 1 tbsp. grnd nutmeg
- 5 c. all-purpose flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon soda
- 1 c. unsulfured molasses
- 1 1/2 c. semi-sweet chocolate mini morsels
- Cream butter; gradually add in sugar; beating well.
- Add in half and half, lemon juice, ginger, cinnamon and nutmeg, beating till well blended.
- Combine flour, baking pwdr and soda; stir well.
- Add in flour mix to butter mix alternately with molasses, beginning and ending with flour mix.
- Stir in chocolate morsels.
- Chill dough at least 2 hrs.
- Work with 1/2 of dough at a time.
- Roll to 1/4" thickness, cut with cookie cutter and place on greased and floured cookie sheet (or possibly use Teflon sheet).
- Bake at 350 degrees for 8 to 10 min.
- Cold on wire racks.
- Continue cutting cookies till all dough is used.
- Makes 5 dozen 2" cookies.
