Crockpot Steak Soup
- 3 cups water
- 1 1/2 cup mixed vegetables frozen, thawed
- 3 each celery stalks chopped
- 2 each onions chopped
- 2 each carrots sliced
- 1 pound beef, round steak diced, browned
- 2 cups tomatoes canned
- 2 tablespoons beef bouillon granules or paste (2 to 4 tablespoons)
- 1/2 teaspoon black pepper
- 1 each butter stick
- 1/2 cup flour, all-purpose
- Put all ingredients in crockpot except for butter and flour.
- Cover and cook on Low for 8 to 10 hours.
- One hour before serving, turn on High.
- Make a roux of 1 stick butter and 1/2 cup flour (melt butter in small saucepan, on med-low heat, and stir in flour); stir until smooth.
- Pour into crockpot and stir into soup.
- Cook soup on High until thickened.
