Spinach And Potato Gratin
- 1 tsp. butter or margarine
- 3 large shallots, thinly sliced
- 2 - 10 oz. pkg. frozen chopped spinach, thawed and squeezed dry
- 1/8 tsp. ground nutmeg
- 1 tsp. salt
- 1/2 tsp. coarsely ground black pepper
- 3 lbs. all purpose potatoes (9 medium), peeled and cut into 1/4 in. thick slices
- 4 oz. Gruyere cheese, shredded (1 cup)
- 1 1/2 c. milk
- 1 c. heavy or whipping cream
- 1 Tbsp. cornstarch
- Preheat oven to 350u0b0.
- Grease shallow 3 quart casserole.
- In 10 inch skillet, melt margarine or butter over medium heat - add shallots and cook 5 minutes or until tender, stirring occasionally.
- Remove skillet from heat and stir in spinach, nutmeg, 1/4 tsp. salt and 1/4 tsp. pepper.
