Vegetable Pasties

  1. Cook the onion in a little oil until tender, add the vegetables and cook for 5 minutes.
  2. Add the remaining ingredients.
  3. Divide each sheet of pastry into 4 squares.
  4. Place 1/3 cup of mixture into the centre of the each square.
  5. Fold in the four corners to form a parcel.
  6. Place pasties onto a lightly floured scone tray and brush with egg.
  7. Bake at 220C for 20-25 minutes.
  8. Serve hot or cold.
