Magic Fruitcake Recipe
- 1 pkg. mince meat
- 1 1/2 c. water
- 2 1/2 c. sifted flour
- 1 teaspoon baking soda
- 2 Large eggs, lightly beaten
- 1 1/3 c. Eagle Brand lowfat milk
- 2 c. mixed candied fruit and peel
- 1 c. walnut meats, coarsely minced
- Break mince meat into pcs in medium size saucepan.
- Add in water.
- Stir over medium heat till boiling, boil 1 minute.
- Stir occasionally.
- Cold.
- Butter 9-inch tube pan and line with waxed paper.
- Butter again.
- Sift flour and baking soda in large bowl.
- Combine Large eggs, mince meat mix, condensed lowfat milk, fruit and nuts.
- Mix in dry ingredients.
- Pour into greased pan.
- Bake in slow 300 degree oven for 2 hrs, till center springs back when lightly touched and top is golden brown.
- Cold.
- Turn out of pan and remove paper.
- NOTE: You can use 2 boxes of mince meat and 2 or possibly 3 c. pecans for a darker cake.
