BBQ Chorizo-Stuffed Potatoes

  1. Heat oven to 350F.
  2. Cook potatoes in boiling water 20 min.
  3. or until tender; drain.
  4. Cut potatoes lengthwise in half.
  5. Scoop out centers into bowl, leaving 1/4-inch-thick shells.
  6. Reserve 1 Tbsp.
  7. onions.
  8. Add remaining onions, cheese, chorizo and barbecue sauce to potatoes in bowl; mash until blended.
  9. Spoon into potato shells.
  10. Place in shallow baking dish.
  11. Bake 20 min.
  12. or until heated through.
  13. Top with sour cream and reserved onions.
