Mahi-Mahi Lettuce Tacos
- Carrot-Ginger Sauce
- 2 cups PURE KRAFT Mayonnaise
- 1 cup HEINZ Apple Cider Vinegar
- 2 Tbsp. wasabi paste
- 2 cups chopped carrots
- 2 cups gingerroot, peeled, chopped
- Tacos
- 48 pieces Bibb lettuce leaves
- 48 pieces grilled mahi-mahi (1 oz. pieces)
- 2 qt. Cooked quinoa
- 96 slices Sliced shishito peppers
- Carrot-Ginger Sauce: Puree ingredients in blender.
- Tacos: Fill each lettuce leaf with 1 oz.
- each mahi-mahi and quinoa, 2 pepper slices and 2 Tbsp.
- Carrot-Ginger Sauce.
