Walnut-Horseradish Cheese in Endive Petals

  1. Preheat oven to 350F.
  2. Spread walnuts on baking sheet, and toast 7 to 9 minutes in oven, or until golden brown and fragrant.
  3. Cool.
  4. Set aside 1/2 cup walnut pieces for garnish.
  5. Process walnuts in food processor until finely ground.
  6. Add cottage cheese and horseradish, and pulse until smooth.
  7. Season with salt and pepper, if desired.
  8. Spoon 1 Tbs.
  9. cheese mixture onto wide end of each endive petal.
  10. Garnish with reserved walnut pieces and dried cranberries.
