Party Nibbles: Brie with Cranberry Chutney
- 1 each brie cheese
- Cranberry Chutney
- 1 cup cranberries
- 1/4 cup brown sugar packed
- 2 tablespoons scallions, spring or green onions chopped
- 2 teaspoons lime juice
- 1 teaspoon jalapeno pepper pickled
- 1 x salt
- 1 x black pepper
- 1 x pecan halves toasted, optional
- In saucepan, bring cranberries, sugar and 1 tablespoon water to boil; reduce heat and simmer, uncovered, for 5 minutes.
- Add onion, lime juice, jalapeno, and salt and pepper to taste.
- Let cool slightly (Can be covered and refrigerated for up to 3 days.)
- Place Brie on ovenproof serving dish.
- Spoon chutney over top.
- Bake in 350F (180C) oven for 10 to 15 minutes or until cheese is just starting to melt.
- Garnish with pecan halves (if using).
- Fresh berries may also be used to garnish.
