Delicate Nut Roll Recipe
- 6 Large eggs
- 3/4 c. sugar
- 1 teaspoon baking pwdr
- 1 c. wheat germ
- 1 c. finely rolled nuts
- 1 1/2 c. heavy cream
- 1 tbsp. sugar
- 1/4 teaspoon vanilla
- Powdered sugar
- 3 tbsp. sugar
- Line jelly roll pan (15x10x1 inch) with waxed paper.
- Separate Large eggs into 2 large mixing bowls.
- Beat egg whites till stiff.
- Beat egg yolks with same beater till thick gradually adding sugar.
- Mix in combined baking pwdr, wheat germ and nuts, then fold into beaten egg whites.
- Spread into jelly roll pan.
- Bake at 350 degrees for 20 min.
- Remove from oven and cover with dampened cloth.
- Refrigeratein refrigerator.
- Turn cake out onto the cloth.
- Remove wax paper.
- Beat cream-gradually add in 3 Tbsp.
- sugar then vanilla and beat till stiff.
- Spread on cake and roll gently.
- Refrigeratein refrigerator or possibly freezer till serving time.
- Sprinkle with powdered sugar before serving.
