Lemon Berry Streusel Muffins

  1. Preheat oven to 400 degrees F. Line muffin cups with paper liners.
  2. In a bowl mix together butter, flour, sugar and zest.
  3. Set aside.
  4. In a large bowl combine flour, baking powder, baking soda, sugar and lemon zest.
  5. In another bowl whisk together egg, buttermilk, melted butter and lemon juice.
  6. Add to dry ingredients, stirring just until moistened and blended.
  7. Fold on fruit.
  8. Spoon batter into prepared muffin tin, filling cups 2/3 full.
  9. Crumble reserved topping over tops.
  10. Bake in the preheated oven for 20 minutes or until lightly browned.
