Horse Mackerel with Herbed Breadcrumbs

  1. Rinse and pat dry the horse mackerel fillets.
  2. Season with salt and pepper (not listed) just on one side.
  3. In a bowl, mix all the ingredients except for the horse mackerel (if you are using fresh herbs, finely chop them).
  4. 1) Preheat the oven to 200C.
  5. 2) Line an oven tray with parchment paper, place the horse mackerel fillets and top with the panko and herb mixture.
  6. Bake at 200C for about 10 minutes in the oven (adjust the baking time and temperature according to your oven.
  7. 11 minutes of baking was perfect in my oven).
