Horse Mackerel with Herbed Breadcrumbs
- 3 whole horse mackerels Horse mackerel (6 fillets)
- 1 tsp Basil
- 2 tsp Herb mix (freeze-dried)
- 1 clove Garlic (finely chopped)
- 1/4 tsp Salt
- 1 dash Black pepper
- 2 rounded tablespoons Olive oil (about 38 g)
- 1 tsp Lemon juice
- 1 rounded tablespoon Grated cheese (about 23 g)
- 6 tbsp Panko
- Rinse and pat dry the horse mackerel fillets.
- Season with salt and pepper (not listed) just on one side.
- In a bowl, mix all the ingredients except for the horse mackerel (if you are using fresh herbs, finely chop them).
- 1) Preheat the oven to 200C.
- 2) Line an oven tray with parchment paper, place the horse mackerel fillets and top with the panko and herb mixture.
- Bake at 200C for about 10 minutes in the oven (adjust the baking time and temperature according to your oven.
- 11 minutes of baking was perfect in my oven).
