Springtime Pasta Primavera
- 1 pound Tri Color Penne (or Any Pasta)
- 2 Tablespoons Olive Oil
- 2 cloves Garlic, Minced
- 1 whole Onion, Diced
- 2 whole Bell Peppers, Diced (I Used 1 Red, 1 Orange)
- 2 whole Tomatoes, Chopped
- 1 Tablespoon Butter
- 2 pinches Salt And Pepper, to taste
- Arugula, For Garnish
- Boil a pot of water and cook your pasta until al dente.
- Drain and set aside.
- Heat olive oil in a skillet on medium heat and add in garlic, onion, and bell peppers.
- Mix around and cook for 3-4 minutes.
- Add in tomatoes and toss to heat through.
- Add in cooked pasta to the skillet as well as butter.
- Sprinkle on salt and pepper then toss to coat everything.
- Transfer to a serving plate and garnish with arugula.
- Enjoy!
