Healthy Baja Fish Tacos with Creamy Chipotle Sauce
- 1/4 cups Canola Oil
- 1 teaspoon Cumin Powder
- 1 pinch Salt And Pepper, to taste
- 2 whole Chipotle Peppers
- 2 cloves Garlic
- 1 whole Lime, Juiced
- 1 pound Firm White Fish (ie. Cod)
- 1/2 pints Grape Tomatoes, Sliced In Half
- 1 whole Bell Pepper, Sliced
- 1 whole Chipotle Peppers, Minced
- 2 Tablespoons Good, Quality Mayonnaise
- 1/2 cups Greek Yogurt (or Strained Regular Yogurt)
- 1 teaspoon Lime Juice
- 1 pinch Sugar
- 1 pinch Salt And Pepper, to taste
- 6 whole Heated Flour Tortillas
- 1 cup Shredded Cabbage Or Lettuce
- 1 slice Limes As Garnish At The Table
- Put all of the marinade ingredients (except for the fish) in a food processor and puree until smooth.
- Pour marinade over fish and allow to marinate for about 20 minutes in the fridge.
- Slice some grape tomatoes and sweet or bell peppers and put them at the bottom of a baking dish.
- Then top it with the marinated fish.
- Pour any excess marinade over fish.
- Bake at 450 degrees F for 20 minutes or until fish is cooked and flaky.
- Put all of the sauce ingredients in a food processor and puree until smooth.
- To assemble the taco Heat tortillas in the microwave, oven or over a griddle.
- Just heat them long enough to warm them up.
- Add some of the broiled peppers, tomatoes and fish to a tortilla.
- Then add the chipotle sauce and some shredded lettuce or shredded cabbage (traditional) for crunch.
- Add a spritz of lime juice.
- Enjoy.
