Healthy Baja Fish Tacos with Creamy Chipotle Sauce

  1. Put all of the marinade ingredients (except for the fish) in a food processor and puree until smooth.
  2. Pour marinade over fish and allow to marinate for about 20 minutes in the fridge.
  3. Slice some grape tomatoes and sweet or bell peppers and put them at the bottom of a baking dish.
  4. Then top it with the marinated fish.
  5. Pour any excess marinade over fish.
  6. Bake at 450 degrees F for 20 minutes or until fish is cooked and flaky.
  7. Put all of the sauce ingredients in a food processor and puree until smooth.
  8. To assemble the taco Heat tortillas in the microwave, oven or over a griddle.
  9. Just heat them long enough to warm them up.
  10. Add some of the broiled peppers, tomatoes and fish to a tortilla.
  11. Then add the chipotle sauce and some shredded lettuce or shredded cabbage (traditional) for crunch.
  12. Add a spritz of lime juice.
  13. Enjoy.
