Stir-Fried Tomato Beef
- 1 lb. boneless sirloin steak
- 6 medium size ripe red tomatoes
- 3 green onions
- 1/4 c. water
- 1 Tbsp. sugar
- 1 Tbsp. cornstarch
- 1 Tbsp. soy sauce
- 1 tsp. cider vinegar
- 1/4 c. vegetable oil
- Trim excess fat from steaks.
- Cut meat into thin slices.
- Core and cut tomatoes into 6 to 8 wedges.
- Cut green onions to 1-inch lengths.
- In a cup, combine water, sugar, cornstarch, soy sauce and vinegar.
- Set aside.
- In a large skillet, heat oil over high heat.
- Add beef.
- Stir until well browned.
- Remove beef to bowl. Reduce heat to medium and add half of tomatoes to skillet.
- Stir in cornstarch mixture and heat to boiling, stirring frequently. Add remaining tomatoes and onions.
- Season with salt.
- Stir in beef.
- Serve immediately, with rice, if desired.
- Serves 4.
