Pacific Saury Kabayaki

  1. Mix the teriyaki garlic sauce and grated ginger.
  2. Fillet the pacific saury.
  3. Cut into your preferred size pieces.
  4. Ask your fishmonger to fillet the fish if it bothers you.
  5. Dust a generous amount of the katakuriko over the fish.
  6. Heat a generous amount of vegetable oil in a frying-pan.
  7. Cook the fish in the pan from the skin-side first.
  8. Cook both sides.
  9. When it gets crispy, add the sauce.
  10. Stir fry briefly.
