Prosciutto-Wrapped Parmesan-Pecan Dates

  1. Heat oven to 350 degrees F. Place pecans on a baking sheet and bake 8 to 10 minutes, or until lightly toasted and fragrant.
  2. Cool.
  3. Raise oven temperature to 450 degrees F.
  4. Make a slit along top of each date.
  5. Cut the Parmigiano-Reggiano cheese into thin slivers.
  6. Stuff a pecan half and a sliver of cheese into each date.
  7. Quarter prosciutto slices lengthwise.
  8. Wrap each date with a strip of prosciutto.
  9. Place dates on a baking sheet; bake 6 minutes, or until prosciutto is crisp and cheese softens.
  10. Transfer dates to a plate and finish with a grinding of fresh pepper.
  11. Serve hot, warm, or at room temperature.
