Ripe Plantains

  1. Cut plantains in half and peel.
  2. Slice them crosswise on the diagonal into 1/4inch ovals.
  3. In a 10inch iron skillet heat oil over moderate heat until hazy.
  4. Fry the plantains for about 4 minutes a side, turning them once.
  5. They should look golden brown.
  6. Drain on paper towels and season well with salt and pepper.
