Peanut Butter Chocolate Kisses

  1. Cream butter and brown sugar together in mixing bowl until light and fluffy.
  2. Add egg, vanilla, and peanut butter; beat well.
  3. Stir in flour.
  4. Cover and refrigerate for 1 hour.
  5. Preheat oven to 375F (190C).
  6. Shape chilled dough into 1-inch balls, arrange one inch apart on ungreased baking sheet.
  7. Bake for 5 minutes.
  8. Remove from oven and press a chocolate kiss in center of each cookie.
  9. Return to oven and bake for 3 to 4 minutes, being careful not to burn chocolate.
  10. Cool on wire racks.
