Roasted Asparagus With Lemon
- 1 12 lbs asparagus
- 2 tablespoons olive oil
- 14 teaspoon salt
- 18 teaspoon pepper
- 1 tablespoon lemon juice
- 12 teaspoon lemon zest
- 6 thin lemon slices
- Preheat oven to 475.
- Snap off ends of asparagus and spread on rimmed baking sheet.
- Pour oil over asparagus and toss to coat.
- Season with salt and pepper.
- Roast 8-10 minutes, turning once, until asparagus is tender and begins to caramelize.
- Transfer to a serving dish, toss with lemon juice and zest and garnish with lemon slices.
