Triple Double OREO Tartufo

  1. Crush 4 cookies finely; set aside.
  2. Scoop each flavor ice cream into 4 balls.
  3. Press 1 whole cookie halfway into center of each vanilla ice cream ball; top with chocolate ice cream ball, pressing together slightly to secure.
  4. Roll in cookie crumbs.
  5. Place on waxed paper-covered baking sheet.
  6. Freeze 2 hours or until firm.
  7. Microwave semi-sweet chocolate and oil in small microwaveable bowl on HIGH 45 sec.
  8. ; stir until chocolate is completely melted.
  9. Cool slightly.
  10. Place wire racks over large sheets of waxed paper; top with ice cream balls.
  11. Spoon melted chocolate over ice cream balls, using about 1 Tbsp.
  12. for each.
  13. Top with cherry.
  14. Freeze 1 hour or until chocolate coating is firm.
