Hot Thai Mussels
- 1 lb mussels
- 14 cup fresh basil leaf, chopped
- 6 Thai red chili peppers, finely chopped (or 2 Jolokia peppers)
- 4 garlic cloves, chopped
- 1 teaspoon lemongrass, chopped
- 18 teaspoon extra virgin olive oil
- 12 cup green onion, chopped
- 12 teaspoon fish sauce
- 18 teaspoon sea salt
- 12 cup water
- clean and debeard mussels.
- cook mussels on hickory bbq until open.
- discard any unopened mussels.
- set aside cooked mussels.
- heat oil in saute pan.
- add onion and garlic to oil until golden.
- add lemongrass, fish sauce, water, salt and chile peppers.
- simmer for 5 minutes.
- add mussels and basil to mix.
- stir until hot and serve.
