Fried Corn Cakes with Green Onions

  1. Preheat oven to 300F.
  2. Blend flour, sugar, baking powder, salt and cayenne pepper in large bowl.
  3. Add milk, egg and vinegar to bowl and whisk to combine.
  4. Mix in corn and green onions.
  5. Heat 2 tablespoons vegetable oil in heavy large skillet over medium heat.
  6. Drop batter by scant 1/4 cupfuls into skillet.
  7. Cook cakes until brown and cooked through, about 3 minutes per side.
  8. Transfer to baking sheet.
  9. Place in oven to keep warm.
  10. Repeat with remaining batter, adding more oil to skillet as needed.
  11. Serve cakes hot.
