Greek Salad
- 1 large head romaine lettuce
- 1/2 large or 1 small Vidalia or other sweet onoin, julienned or sliced thin (about 1 cup), rinsed with cool water
- 2 medium cucumbers, peeled and cut into wedges
- 8 ounces feta cheese, cubed
- 1 teaspoon dried oregano
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar, optional
- 1/2 teaspoon sea salt, optional
- Remove and discard the outer leaves of the head of romaine lettuce.
- Chop the lettuce and transfer to a colander.
- There should be about 8 cups.
- Rinse under cold water, shake or spin dry, and set aside to drain completely.
- In a salad bowl, combine the rinsed onion, cucumber, and feta.
- Add the lettuce and oregano.
- Toss with the olive oil and vinegar, if using.
- Season to taste with salt, if desired.
- Serve immediately.
