Swiss Chard with Toasted Breadcrumbs

  1. In a 5-quart saucepan, melt 1/2 tablespoon of the butter over medium heat.
  2. Add the breadcrumbs and a pinch each of salt and pepper.
  3. Cook, tossing, until golden brown, 2 to 3 minutes.
  4. Set aside; wipe the pan with a paper towel.
  5. Trim the chard; slice crosswise 3/4 inch thick, keeping the stems separate from the greens.
  6. In the pan, melt the remaining 2 tablespoons butter over medium-high.
  7. Cook the stems, stirring, until tender, 4 to 6 minutes.
  8. Add the greens; cover and cook over medium-low until wilted, 5 minutes.
  9. Uncover; cook, stirring, over medium-high until the pan is dry, 6 to 8 minutes.
  10. Season with salt and pepper; add a pinch of sugar, if desired.
  11. Top with the toasted breadcrumbs.
